The olive oils from Oleum Flumen are the result of two families working together with the olives they grown on 180 hectares of olive groves with seven different varietals of olives. This "Premium" oil is made using 100% Arbequina olives harvested in late November and early December. The olives are pressed within four hours of harvest to maintain as much of the fresh flavors and antioxidant properties as is possible. The oil has a beautiful green-gold color and offers a clean and full aroma of fresh cut grass. The flavors are harmonious with a touch of intensity and pepper on the finish.
