Prepare 60 cl. of broth. In a saucepan, fry the rice with truffle, mix and sprinkle with a little of white wine; stir constantly adding the broth little at a time until the rice is cooked, for about 20 minutes. Finally, remove from heat and add cold butter and/or cream and/or parmesan cheese while stirring vigorously to halt cooking.
